Favorite Recipe... Friday Blog Hop

THEME this week is Favorite Recipe.

Last summer my hubby and I were going to try new recipes on Mondays which is his day off, we did it only a couple weeks but I did find my favorite recipe to make.  I think hubby and I will have to start this again.

SWEET and SOUR CHICKEN BAKE

1/4 c. butter (scant)
1. c. chopped carrots
1/2 c. chopped onion
1/2 c. coarsely chopped green pepper (sometimes i use red, yellow, or orange peppers)
3/4 c. catsup
2 tbsp. vinegar
1/4 c. firmly packed brown sugar
1 tbsp. soy sauce
1/2 tsp. garlic salt
1/2 tsp. salt
1/8 tsp. pepper
1 c. pineapple chunks, drained
1 (3 lb.) chicken breast, cut up

1. Preheat oven to 375 degrees. In medium skillet, heat butter until melted, add carrots, onion and green pepper. Cook 5 minutes, stirring.2. Stir in catsup, pineapple juice, vinegar, sugar, soy sauce, garlic salt, salt, pepper, and ginger. Cook, stirring constantly until mixture boils. Remove from stove, add pineapple chunks.
3. Arrange chicken pieces in 9"x13"x2" baking pan. Pour sweet 'n sour sauce over all. Bake, covered about 45 minutes, uncover and bake about 30 minutes longer.

Make sure you cut the carrots small or they will not cook well.  Sometimes I also add more pineapple to make it sweeter.  My husband adds more red pepper to make his have more kick.  I also make white rice and then pour this on top of it!  SO YUMMY!!!

Sorry I no picture to show you the yummy creation!  TRUST me... it might sound like a lot of steps but is very simple!

"The Reading Game" Review and Giveaway

Description: The first book in  The Reading Game  learn-to-read series tells the story of a skunk without a stripe who is rejected by the other skunks but finds acceptance among some cats and becomes their defender.  It’s told in rhyme, is beautifully illustrated, and is 32 pages long.  It will be the first book the student reads, and there are five more to follow in this groundbreaking learn to read program. Each of The Reading Game's six stories is told using just thirty new words.  These are broken down into six sets of five words.  The student learns to read each set of five words by playing a simple word matching game.  Frequent exposure through play hard wires these words into long-term memory.  Rote learning is transformed into a fast-paced game with a winner every few seconds. After completing Skunk, Game 1, the student has learned five words (can, cat, is, me, not).  Playing Game 2 adds an additional five w...
