April is Grilled Cheese Month- YUM! Giveaway Included

I'm a Wisconsin girl so I automatically love cheese, but on cold rainy or even snowy spring days a nice grilled cheese sandwich can make the dreary day much better.  


Thanks Udi's for sending me some bread to sample and try for my grilled cheese sandwich.  

Udi's bread is amazing!  It is gluten free, GMO free, no artificial flavors, no coloring's, no preservatives, and no synthetic additives.  The goal of Udi's is to provide people with the best gluten-free food on the planet.  They create delicious products that will fill everyone's stomachs and warm our souls.  The flavor and texture of Udi's Gluten Free breads, buns, bagels, muffins, cookies and granola's are so good fans have been known to cry with joy. 

I truly would never know that Udi's was gluten free because the flavor is full and very good on the taste-buds.  My kids love Udi's bread as well and enjoy fruit sandwiches and toast almost daily and with Udi's help I rest assured they are eating well.  
   
Since April is Grilled Cheese Month I just had to try a new type of grilled cheese sandwich.  My grilled cheese creation was with a spinach and tomato sauce and it was so tasty! 

Grilled Cheese and Spinach and Tomato Sauce

Ingredients

4tablespoons olive oil
1small onion, chopped
2cloves garlic, minced
1cup canned crushed tomatoes in thick puree (from one 15-ounce can)
½teaspoon salt
¼teaspoon  black pepper
1pound spinach- was well and remove stems
8slices of Udi's bread
½pound mozzarella, sliced
¼pound mild goat cheese, crumbled (about ¾ cup)


Directions

In a large saucepan, heat 2 tablespoons of the oil over moderately low heat. Add the onion and cook, stirring occasionally, until translucent, about 5 minutes. Stir in the garlic, tomatoes, salt, and pepper. Simmer for 5 minutes. Add the spinach and simmer until the spinach wilts and the sauce thickens, about 5 minutes longer. Cover to keep warm.
Top 4 slices of the bread with mozzarella. Spoon some of the spinach mixture over each, spreading the spinach to the edges of the bread. Sprinkle the goat cheese over the spinach and top with the remaining bread slices. Bread will turn golden brown when its done and cheese will be melted.
